It is the difference in impedence.  Most headphones are in the range of 
8-16 ohms (average, it varies on frequency and phase angle)  while most 
line in's are in the range of 300-450 ohms.  Driving a higher resistance 
load will not damage an output, only driving a lower impedence load.  As 
for the PCM/DTS optical and coaxial output, that is audio only.  The 
video outputs are likely S-Video, Composite, and possibly Component.  I 
have never seen a projector that does not at least support composite in, 
although I am sure they exist.
