Either under /opt or /usr/local. So that'd be /opt/soffice or
/usr/local/soffice. If you want to be FHS compliant, it should
be under /opt, since the FHS specifies that there should not
be "extra" directories under /usr/local. (Some apps still default
to /usr/local, but I hope that will change in the future.)
