CVS is "Concurrent Versions System" a package that allows multiple
people working on a software project to control revisions and such.
(A single person can use it as well, but it's aimed at groups...)

It's pretty much the default version control system for just about
any large Free Software/Open Source project - with the notable 
exception of the Linux kernel, which uses Bitkeeper. The CVS 
homepage is at http://www.cvshome.org/. KDE, GNOME and many, many
other projects allow you to "check out" the current source tree
using cvs so you can play with the latest bleeding edge software.
It's written for developers, by developers and the syntax and
usage is quite a bit less than intuitive or (IMHO) pleasant.
