Sorry for the vague post - the names were incorrect. I had saved the files
with .cac extensions, and for whatever reason, I was referencing them by
another extension when running the openssl command.  Once I corrected
that, everything worked as expected and I got my PEM files that I needed
for my Apache conf.  Doh!
