I usually put /tmp, /usr, /var, and /home on their own partitions since 
I've heard Linux is unhappy when / is full.  If I were setting up a 
machine today I'd put all those in LVM so it would be easy to move space 
around.  I'd probably leave / out of LVM since it adds a little 
complexity that I don't have time to figure out right now (I'm not sure 
the Debian stock initrd supports that and I don't want to build my own).

Jafo recently wrote about an 8x performance hit with LVM on large 
writes.  That hasn't bothered me yet and may not matter in practical use 
but I hope the kernel guys are working on it.
