Another good strategy is a retainer agreement.  

	For X amount of dollars I will respond to Y support requests
	over the next 6 months (or whatever timeperiod).

Then define what a support request is and isn't.

If you are concerned about having to support after hours, you could
say that each request will be addressed within 24 (or 48 or whatever) 
hours.  A "rush" request (which would include after hours work) could
count as multiple incidents.  

This way, you get your support money up front, and it's up to the
client to dictiate, how, when, and if, the incidents are used.
