Next time, try a "ps aux|grep xfs" to see if xfs died.  It way be the 
problem.  Config files fo not magically change.  Do you usually log in as 
root or as an unprivledged user?  Only root should have access to the 
config file, so, if you are not root, it should not change.  Did you save 
your old config file to do a "diff" on them?  There is always a reason for 
these things.  Once you find the root cause, it will be much easier to fix, 
and you may even be able to do a permanent fix.
