[CLUE-Tech] changing identity when using pine

My username is user1(@powerpull.net).  When I send email to people outside of my
LAN I the mail to appear to be coming from jason.friedman at powerpull.net, or
sometimes jason at powerpull.net.  How do I do this with pine (or with the plain
old mail program, for that matter)?  I want the recipient to be able to click
'Reply' on his/her end and have that email addressed to
jason.friedman at powerpull.net (or sometimes jason at powerpull.net).
