One caveat.  This works.
However, if you currently have nothing in default-composer-hdrs in 
.pinerc, subject:, to:, and cc: appear as your defaults in the 
compose window in pine.  If you insert the From: in that parameter 
and nothing else, you will no longer have anything other than from.  
At least, those were my results using the version of Pine which came 
with about a year old version of Red Hat.
