I think you don't have to muss up your FVWM config. I do this on
Jerusalem (the Instructor box for Linux Fun-da-mentals) and Geneva (my
laptop) pretty regularly.

Try this process:
1.Make sure your "Screen" section in /etc/X11/XF86Config-4 or
/etc/X11/XF86Config has all the screen-resolutions your video-card and
monitor can reach. Mine looks like this:
    Section "Screen"
     Identifier "Screen0"
     Device "Videocard0"
     Monitor "Monitor0"
     DefaultDepth 16
     SubSection "Display"
     Depth 16
     Modes "1400x1050" "1280x1024" "1280x960" "1152x864" "1024x768"
    "800x600" "640x480"
     EndSubSection
    EndSection

2.Just before the the presentation, cut the resolutions that are too
high to use, so that the 'Modes' section looks like the one below and
restart your X-server with <CTRL>+<ALT>+<BACKSPACE>.
    # ORIGINAL - Modes "1400x1050" "1280x1024" "1280x960" "1152x864"
    "1024x768" "800x600" "640x480"
    Modes “1024x768” "800x600" "640x480"
During the presentation, you can use
<CTRL>+<ALT>+< keypad+ | keypad- > to 'zoom in' on hard-to-read stuph.

3.When your presentation is done, just change the comments around, like
this, and restart your X-server again.
    Modes "1400x1050" "1280x1024" "1280x960" "1152x864" "1024x768"
    "800x600" "640x480"
    # PRESENTATION - Modes “1024x768” "800x600" "640x480"
