Nvidia can be a bit weird.  You'll want to install nvidia-settings, run it as root, set up seperate X displays with xinerama, write the config, then reboot.  Twinview can be a PITA as it makes your screen one big monitor.  In other words, when you maximize something, it will spread across both screens.
