My impression is that both were designed for tablets or for touch-screen monitors. I can tell you a few things I don't like but I abandoned it last summer, so I don't remember everything I hated and I don't know if they fixed any of them. Based on complaints, I don't think so.
1. I haven't tried Unity but I don't like Gnome 3's cumbersome method of starting a program that you don't know the name of. On a large screen, it requires a lot more mouse movement. Plus the icons are too damned big because they are meant to be touched. If you know the name, there is a way to type the name instead. But if you don't know the name?
2. I don't like the fact that deleting a file in Gnome doesn't work with Ctrl-D anymore. That's definitely not tablet-oriented.
3. If I recall correctly, clicking on an icon would not start a program if it was already running. It would take me to that program instead. I think I had to hold down a key to start another copy.
4. I don't want programs to automatically maximize if I accidentally move it to the top of the screen.
5. Most of the configurability disappeared. System is gone. There is an addon package for configuration, but it only does a few things. Why should this be an addon?
6. Gnome 2 worked nicely with sshfs but I couldn't change the sshfs configuration in Gnome 3. I think the whole network part disappeared.
7. The assumption is that everyone had accelerated graphics now. Gnome Shell would lock up my netbook at boot, so I tried the classic view instead. It looked like crap compared to Gnome 3's menus. It was obvious which one they wanted me to use.
8. Supposedly Gnome 3 is supposed to enhance your work flow. It interfered with mine, so I tried alternatives. I eventually settled on KDE4.
9. I want to put icons on the desktop! Working documents go there. Yes, you can re-enable it but I think the addon package is needed.
The moderator on Gnome's mailing list had the attitude that the developers made these decisions and the users must abide. User comments are not welcome unless they support the developers. Anything else was deemed negative and he would threaten to kick you off the list.
It seems to me that Gnome learned nothing from KDE's experience rolling out KDE4. A big part of KDE's problem was releasing a development version and distros immediately made it their KDE standard. But it also took KDE a while to restore all the missing functionality.
I think that the current developers wanted to leave their mark. Be forward thinking! No legacy! Be revolutionary! Little attention seemed to paid to what was good in Gnome 2. Revolutions tend to be messy and don't care about people trying to get work done. Evolution is usually more gentler.
