Well, several things you can do. 

1) make sure mail works locally, ie, mail yourself something from a
command line on the new machine and make sure it delivers it fine. 

2) Configure a remote machine to send mail to your domain at
the new server (this can be done very easily with qmail by doing:
'echo domainname.com:newserverip >> /var/qmail/control/smtproutes')
and send email from that machine and confirm that it is delivered
correctly. I'mn sure you could set this up with sendmail/postfix/exim
as well. You could also have your new server accept mail for it's IP
and mail 'youraccount@[new-server-ip-address]' and confirm that it
goes there. Or you could telnet to the new server ip and type in an
email and make sure it's accepted and delivered correctly.
