Of the ones I have used:

Sendmail:

	very old. Very crufty. Very insecure. Hard to configure. Avoid
	at all costs. ;) 

Qmail: 
	Secure and very easy to configure, but now poorly
	maintained. You have to apply a number of patches to get it to
	have all the modern features or even compile. 

Postfix:
	Secure and easy to configure. Ships with most Linux distros
	these days if only as an option. Has all the modern features,
	works great. Lots of good anti-spam measures, SSL, smtp auth,
	etc. This is the one I would reccomend these days.
