You may indeed want to consider a Mac as a viable open-source solution.
I am happily running a Mac as my primary (laptop) system. Mac minis's
are also a great low-cost option.
Many GNU tools are built-in to OSX (BSD-based). A lot of open-source
tools are readily available as native OSX applications (prebuilt).
For pure X, an X-Desktop is available free from Apple which runs right
on the OSX desktop, and the debian-based fink project has a lot of
packages which can be built from source.
I have not gone there yet, but you can also bypass OSX completely and
boot Linux-PPC instead.
(I have an AMD desktop/server for that).
