Try the 'grip' program under Linux.  I've been using it with great
results for years.  It is a ripper and encoder only -- rips the data
from the cd then uses an encoding program to compress it into an mp3.
It is highly configurable and will automatically reach out to the
internet to find track information.

As for media players under Linux the best thing I can say is you have
plenty of choices to try and hopefully will find one that suits your
taste.  I enjoyed using the 1.5 versions of Amarok but the maintainers
have started a complete rewrite of this application and are calling it
Amarok 2.x.  Its different look and feel is taking some getting used to
but I think I'll be ok with it in the end.

Working with Linux takes patience but in the end you get a lot of return
for very little cost.  So keep asking questions and we'll help you
along!
