Thanks to everyone for their suggestions.

Gus, that would be a fun project to do, but as I don't really have time for
a DIY solution right now, I ended up pulling the trigger on the CT-80 from
Radio Thermostats last night: http://www.radiothermostat.com/control.html .
It's the step up from the model that gets rebadged as the 3M Filtrete
device that Landon suggested. I would have gone with that one, but it
doesn't have automatic heat/ cool switching, which is a feature I really
want. Anyway, it meets my requirements for features and isn't something
custom I have to worry about replacing (either because it's too weird for a
normal person, or I just don't want to part with it) when we sell this
house in 6-ish years. It was a little more than I'd hoped to spend for
something off the shelf, but not too bad, and certainly reasonable compared
to other devices I've looked at. I also like that it can be upgraded to
also have Zigbee or Z-wave connectivity at some point. I'm shocked at how
inexpensive those Venstar units seem to be.
